Preparation steps

1.

Rinse the basil and remove the leaves from the stems. Add the smaller basil leaves to an ice cube tray and fill with the mineral water. Place the ice cube tray in the freezer and let freeze completely.

Peel and slice the cucumber, then mix with the salt. Rinse, trim, and quarter the tomatoes. Crush the peppercorns, then mix with the tomatoes, cucumber slices, large basil leaves, and 4 tablespoons of lemon juice. Let the mixture infuse for 4 hours.

Toast the pine nuts in a dry pan, then remove from the heat and finely chop. Dip the top 3-4 cm (approximately 1-1 1/4 inches) of the glasses in lemon juice, then coat in the pine nuts. Pass the tomato mixture through a fine strainer. Divide the basil ice cubes into the glasses, top with the tomato juice, and serve.
