- 150 grams Red Lentils
- 600 grams Bologna sausage
- 1 bunch scallions
- 2 Tbsps pickled, green peppers
- 2 Tomatoes
- 2 Tbsps parsley
- salt
- freshly ground peppers
- 3 Tbsps Red wine vinegar
- 3 Tbsps water
- 4 Tbsps olive oil

Preparation steps
1.
Rinse lentils thoroughly under running water, then cook in salted water for about 20 minutes. Allow to drain.
2.
Cut sausage into thin slices.
3.
Trim scallions and cut into diagonal slices.
4.
Rinse tomatoes, remove seeds and cut into thin strips.
5.
Mix all prepared ingredients with the lentils, peppercorns and the parsley.
6.
Whisk together the vinegar, water and olive oil and season with salt and pepper. Toss with the salad, adjust seasonings and serve.
