1 sm head Red cabbage (1 kg)
2 pink Grapefruit
2 pomegranates
2 Tbsps apple cider vinegar
1 Tbsp honey
salt
3 Tbsps grapeseed oil
1 bunch Cress

Preparation steps

1.

Rinse cabbage, remove outer leaves and hard stalk and slice into thin strips.  

2.

Peel grapefruits, removing as much pith as possible, and fillet, collecting all resulting juice.  

3.

Halve pomegranates, remove seeds and collect all resulting juice. 

4.

Whisk 2 tablespoons of grapefruit juice with pomegranate juice, vinegar, oil and honey, season with salt. Add red cabbage and toss well, let stand for 30 minutes. Add fruit fillets and pomegranate seeds, season to taste and garnish with cress. Serve.
