- 40 grams raisins
- 4 centiliters Rum
- 800 grams starchy potatoes
- 3 Tbsps Pastry flour
- ¼ tsp Baking powder
- 2 eggs
- 1 pinch salt
- 50 grams sugar
- 1 tsp lemon zest (organic)
- 300 grams Quark
- clarified butter (for frying)
- powdered sugar (for dusting)

Preparation steps

Soak raisins in rum.

Scrub potatoes thoroughly and cook in a pot of boiling salted water until knife-tender, about 20 minutes. Drain and rinse in cold water, then drain again. Peel and press through a ricer. Mix flour with baking powder and mix with eggs, drained raisins, salt, sugar, lemon zest and quark. Fold into potatoes and let rest about 20 minutes.

Use a spoon to make small portions of dough and cook in hot butter on all sides for 4-5 minutes or until golden brown. Drain on paper towels and serve dusted with powdered sugar.

Serve with apple compote if desired.
