50 milliliters Beet juice
1 Tbsp lemon juice
300 grams cold Buttermilk

Preparation steps

Rinse and trim the radishes. Using a vegetable peeler, cut 2 thin spirals from one of the radishes and set aside for garnish. Coarsely chop the remaining radishes and add to the blender. Puree the radish with the beet juice and lemon juice. Add the buttermilk and blend briefly until combined. Season to taste with salt, pepper, and Worcestershire sauce.

Place the chives on a plate. Moisten the rim of two glasses, then dip in the chives. Add the buttermilk mixture to the glasses, garnish with the radish spirals, and serve immediately.
