Purple Potato Chips
Purple potatoes are old potato varieties that score points for secondary plant substances. These not only give the potatoes their colour, but are also said to have a positive effect on blood pressure.
If you like, you can also season the purple potato chips with paprika powder and pepper. Also a dip made of quark, spices and a little milk goes perfectly with the homemade chips.
Rinse potatoes thoroughly, pat dry with paper towels. Heat oil in a saucepan. Cut potatoes into thin slices and spread on paper towels. Pat dry with other paper towels, season with salt lightly.
Cook potato slices in portions in hot oil for 2-3 minutes per portion. Drain on paper towels and cool. Place into a bowl and serve.
