- 800 grams purple potatoes
- salt
- 400 grams Ground elder (substitute baby spinach)
- 2 Tbsps butter
- 1 Tbsp grained Mustard
- 1 tsp lemon juice
- salt
- freshly ground peppers
- 1 pinch sugar

Preparation steps

Peel the potatoes, cut them into pieces and let simmer in salted water in a pot for about 15 minutes. Rinse the goutweed or baby spinach, cut into small pieces and steam for 5-8 minutes in a steamer over the potatoes.

Remove and drain the potatoes. Melt the butter in a large frying pan and add in the goutweed or spinach with the potatoes. Add the mustard and lemon juice and season with salt, pepper and sugar.
