Milk and Butter supply the body with vitamin A. Since growth processes of many cells depend on the nutrient, a sufficient supply with it also favors the mucous membranes.
If you can't get purple potatoes, you can of course make the mashed potatoes with yellow potatoes. For a vegan version, replace the butter with vegetable oil and the milk with a vegetable drink of your choice.

Preparation steps
Peel potatoes, cut into coarse pieces and cook covered in a little salted water for about 25 minutes.
Bring the milk to the boil, season with salt and 1 pinch of freshly grated nutmeg. Add 2/3 of the butter and let it melt in the milk.
Drain potatoes, let steam briefly, press through a potato ricer while warm and mix with milk. Season mashed potatoes to taste. Put remaining butter on hot mash and grind pepper over it.
