15 ozs Whole Grain Spelt Flour
4 ½ ozs cold butter
1 ¾ ozs Date Syrup
2 tsps ground ginger
2 tsps cinnamon
1 generous pinch ground cloves
1 generous pinch allspice
1 pinch salt
1 generous pinch Baking powder

Preparation steps

Separate eggs (use egg whites elsewhere). In a bowl, mix flour with butter, syrup, egg yolks, ginger, cinnamon, cloves, allspice, salt and baking powder and knead into a smooth dough. Cover and chill for 1 hour.

2.

Take small portions of the dough, form into balls, flatten and place on a baking tray lined with baking paper. Bake in a preheated oven at 180 °C / 350 °F for 10-15 minutes. Remove the cookies from the baking tray and allow them to cool.
