- 2 shallots
- 2 Tomatoes
- 1 yellow Bell pepper
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- 1 generous pinch dried oregano
- 300 grams Puff pastry dough
- butter (for molds)
- 8 Anchovy fillet (pickled)
- 8 black Olives
- Rosemary blossom (for garnishing)

Preparation steps

Peel shallots and cut into strips. Rinse, dry, halve and thinly slice tomatoes. Rinse bell pepper, halve and remove seeds and ribs, cut into thin strips. Heat olive oil in a pan and saute shallots, tomatoes and pepper, stirring occasionally, for about 8 minutes. Season with salt, pepper and oregano .Cool.

Roll out puff pastry and line 4 small buttered ramekins with it. Prick several times with a fork. Divide vegetable mixture among ramekins and bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes. When cooled, remove from ramekins and top with anchovies and olives. Garnish with rosemary flowers and serve.
