- 16 ozs Puff pastry
- 2 Tbsps olive oil
- 4 Leeks (sliced)
- 1 Tbsp chopped thyme
- 1 cup Ricotta cheese
- 2 large eggs (beaten)

1 Baking sheet, 1 Bowl, 1 Tablespoon, 1 Teaspoon, 1 Parchment paper
Preparation steps

Roll out the pastry and cut out 4 squares. Make a shallow cut in the squares 1 cm|1/2" in from the edge and all the way around.

Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a large baking tray.

Heat the oil and cook the leeks until soft, but not browned. Stir in the thyme and leave to cool.

Beat the Ricotta with the eggs, then stir in the leeks and mix well. Season with salt and pepper.

Put the pastry squares on the baking tray. Spoon on the leek mixture in the centre of the pastry, leaving the cut edge clear.
6.
Bake for about 20 minutes until the pastry is golden brown. Serve warm garnished with thyme and salad leaves.
