Preparation steps

1.

Rinse the lemons in hot water, pat dry and cut into 4 wedges. Lightly press each wedge into sea salt until well coated. Layer the lemon wedges into a glass jar and cover with boiling water. Seal the jar and store for 4-5 weeks in a cool, dark place.

The preserved lemons can be used as a condiment or use in salads, stews and other dishes.
