- 50 grams black Olives
- 6 young garlic cloves
- 2 rosemary
- 3 Tbsps olive oil

- 200 milliliters Chicken broth
- 3 Tbsps honey

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse Poularde, pat dry and cut into 8 pieces. Season with salt and pepper. Fry chicken pieces in hot oil on all sides. Deglaze with broth. Cut preserved lemon into slices. Press garlic through a garlic press. Strip leaves from rosemary. Season chicken pieces with pepper and transfer to a baking pan. Scatter with lemon slices, garlic, rosemary and olives. Bake until browned, occasionally turning, about 30 minutes. During the last 10 minutes of baking time, brush chicken pieces with honey. If necessary, broil the chicken a few minutes until completely browned. Season with salt and pepper.

Serve with white bread, if desired.
