2 tsps black peppercorns
10 organic lemons
200 grams salt
8 fresh bay leaves
150 milliliters olive oil

Preparation steps

1.

Coarsely grind the peppercorns in a mortar.

Rinse 8 lemons in hot water, pat dry, and cut into quarters. Layer the lemons with the salt, bay leaves, and pepper. Press down on the mixture, and infuse overnight. Squeeze the remaining lemons, add the juice into the jar and then completely cover with oil.

3.

Place in a cool, dark place. Infuse for 4 weeks before using.
