- ½ cup white wine vinegar
- ½ cup dry white wine
- 4 sprigs thyme
- 2 cloves
- 2 tsps sugar
- ½ tsp Sea salt
- 2 heads garlic cloves (separated into cloves and peeled)
Preparation steps

Put all the ingredients except the garlic into a large pan. Heat gently, stirring, until the sugar has dissolved.

Increase the heat and bring to a boil. Cook steadily for 5 minutes, then add the garlic. Bring to a boil, then cover and remove from the heat. Leave to stand at room temperature for 24 hours. Remove 1 clove.
3.
Bring to a boil again, then spoon into hot sterilised jars. Seal tightly and leave to cool. Store in the refrigerator for 1 week before using.
