- 16 sheets Rice paper
- 5 ozs green Asparagus
- salt
- 3 Tbsps sesame oil
- 8 Prawn
- 1 Tbsp Rice vinegar
- 1 red chili pepper (finely chopped)
- 1 tsp Fish sauce
- 1 Cucumber (cut into sticks)
- ½ bunch Chives (sliced)
- 8 Lettuce

Preparation steps
1.
Spread the sheets of rice paper out separately between 2 damp tea towels.
2.
Cook the asparagus and in salted boiling water for 10 minutes, until cooked but still retaining a little bite. Drain well.
3.
Heat 1 tablespoon sesame oil and briefly fry the prawns. Season with salt.
4.
Mix together the remainning sesame oil, rice vinegar, chilli and fish sauce to make a dressing.
5.
Place the sheets of rice paper together in twos, on on top of the other, and lay 1 lettuce leaf on each pair. Flatten slightly.
6.
Put one prawn, some cucumber sticks, chives and asparagus in the middle of each, with the top of the filling level with one edge. Sprinkle with a little dressing.
7.
Fold 1 side over the filling and then roll up firmly. Stick the edges with a little water.
