8 King prawn
2 Tbsps cornstarch
800 grams Asparagus
1 bunch scallions
1 pc fresh ginger
1 garlic clove
4 Tbsps vegetable oil
1 tsp sesame oil
¼ l Chicken broth
2 Tbsps soy sauce
salt
peppers
1 pinch sugar

Preparation steps

Remove heads and shells from prawns, devein, rinse and pat dry. Toss prawns with the cornstarch.

Trim asparagus, cut ends and cut asparagus into slices. Blanch 5 minutes together in boiling salted water, rinse in cold water and allow to drain. Rinse scallions and cut diagonally into thin slices. Peel ginger and garlic and chop very finely.

Heat 1 tablespoon vegetable oil in a pan, add 4 prawns and sauté 2 minutes on each side. Remove and set aside. Fry remaining prawns in the same manner. Add 1 tablespoon vegetable oil to the pan and add scallions, ginger and garlic and stir-fry for 3 minutes. Then remove from the pan and place on plates. Heat the remaining vegetable oil with the sesame oil and fry the asparagus pieces while stirring for 2 minutes. Pour in chicken broth, add scallions, ginger and garlic and season with soy sauce, salt, pepper and sugar. Finally, add the prawns and fry briefly. Serve with rice, if desired.
