1 kilogram potatoes
150 grams Bacon
2 onions
2 Tbsps butter
2 Tbsps Pastry flour
500 milliliters Broth
150 grams Whipped cream
salt
freshly ground peppers
Nutmeg
½ Tbsp Vinegar
3 Tbsps scallions

Preparation steps

1.

Thoroughly rinse the potatoes and cook in boiling salted water. Finely dice bacon.

2.

Peel the onions and finely dice. Cook bacon over low heat, then add the butter and onions and sauté. Dust with flour and sweat lightly. Whisk in the broth and simmer gently about 15 minutes, stirring occasionally. Stir in the cream, let heat through and season with salt, pepper, nutmeg and vinegar.

3.

Drain potatoes, rinse briefly and peel.

4.

Arrange potatoes and sauce on plates and garnish with chives.
