4 stalks Celery
2 garlic cloves
2 Tomatoes
3 Tbsps olive oil
8 slices smoked Halibut
½ tsp Caraway
1 Tbsp Tomato paste
2 Tbsps Lobster butter
1 pinch cayenne pepper
4 centiliters Brandy
800 milliliters Whipped cream
4 Tbsps Crème fraiche
scallions (for garnish)

Preparation steps

Peel onions and chop. Rinse celery, trim and chop. Peel garlic cloves and chop. Rinse tomatoes and coarsely chop. Heat olive oil in a large saucepan and sauté onions, garlic and celery for 2 minutes while stirring.

Add 4 slices of halibut, cumin, tomato paste, lobster butter and cayenne pepper to saucepan. Sauté for another 2 minutes, stirring constantly. Deglaze the pan with brandy and then add cream. Simmer over low heat for about 10 minutes, then remove from heat and let rest 10 minutes.

Slice remaining halibut and arrange in 4 soup bowls. To serve, heat soup and pour into the four soup bowls over halibut slices. Crown each bowl with a spoon of crème fraîche and garnish with chopped chives.
