Preparation steps

1.

Rinse the potatoes and cook in boiling salted water until tender, about 25 minutes. Drain, peel and cut into cubes. Peel and dice the onions. Cook in the broth for 5 minutes, and then pour over the potato cubes. Allow to soak for 30 minutes.

Rinse the cucumber, cut in half lengthwise, remove seeds and slice. Rinse the tomatoes and cut into wide strips. Slice the sausages. In a bowl, blend the vinegar, salt, pepper and oil together. Toss with the potatoes, cucumber, tomatoes, sausages and chives.
