- 1 ½ kilograms waxy potatoes
- salt
- 1 onion
- 50 grams Bacon
- finely chopped peppers
- 250 milliliters granulated instant Beef broth
- 5 Tbsps Vinegar
- sugar
- 4 Tbsps vegetable oil
- 1 bunch parsley

Preparation steps
1.
Rinse the potatoes and cook in salted water for 20 - 25 minutes.

Peel the onion and chop finely. Dice the bacon finely and crisp in a frying pan.
Drain the potatoes, peel while still hot, cut into slices and arrange in layers in a dish. Season with salt and pepper and shower with the onion and bacon cubes.

Heat the broth and mix with 1 tablespoon of vinegar and a pinch of sugar. Pour over the potatoes, toss everything in the dish and then drizzle the remaining vinegar and oil over the top. Mix everything again by gently swirling the dish, cover and leave to marinate for 1 hour.
4.
Season again with salt and pepper before serving.
5.
Serve garnished with parsley.
