- 1 ⅕ kilograms predominantly waxy potatoes
- 2 eggs
- 1 Tbsp Pastry flour
- salt
- freshly ground peppers
- 1 Tbsp chopped parsley
- vegetable oil (to saute)
- 400 grams sliced smoked Salmon
- 4 Tbsps Salmon caviar
- edible Orchid flower for garnish (to taste)
Preparation steps

Peel potatoes, rinse and grate on the large holes of a box grater into a bowl. Add the eggs and flour, season with salt and pepper and stir in the parsley. Mix to combine.

Preheat the oven to 80°C (approximately 175°F). Heat the oil in a large skillet and working in batches, drop the potato mixture by tablespoonfuls into the pan and flatten. Cook until golden brown on both sides. Drain on paper towels and keep warm in the oven.

Serve pancakes with topped with salmon and salmon caviar and garnish as desired with edible flowers.
