600 grams starchy potatoes
Salt and freshly ground pepper
1 bunch scallions
100 milliliters milk
40 grams butter
grated Nutmeg
50 grams trout or Salmon caviar
100 grams thinly sliced Smoked salmon
Dill (for garnish)

Preparation steps

1.

Rinse and peel the potatoes, cut in half and boil in salted water for about 25 minutes, until tender. Rinse the scallions and chop finely. Heat 10 grams (approximately 1 tablespoon) of butter in a pan and sauté the scallions until softened.

Heat the milk in a small saucepan. Drain the potatoes and transfer to a large bowl. Mash the potatoes with a potato masher while gradually adding the hot milk. Cut the remaining butter into pieces and stir into the potatoes. Season with salt, pepper and nutmeg to taste and stir in the scallions. 

3.

Serve the mashed potatoes with caviar and smoked salmon and garnish with fresh dill.
