250 grams Smoked salmon
250 grams Sour cream
30 grams Beluga caviar
salt (and pepper)
vegetable oil
4 Dill

Preparation steps

1.

Cut the salmon into chunks and purée with the sour cream in a blender until smooth. Season with salt and pepper. Grease 4 small ramekins with oil. Fill with 1/2 the mousse.

2.

Make a small well in the middle of the mousse, fill with caviar then cover with the remaining mousse. Smooth the surface, cover the ramekins and chill. 

3.

Before serving, briefly dip the ramekins in hot water and invert onto serving plates. Garnish each mousse with a sprig of dill.
