Preparation steps

Preheat the oven to 200°C (approximately 400°F). Rinse kale, blanch for 2 minutes in boiling salted water, and remove. Drain, remove the thick stems and cut the leaves into strips. Peel the potatoes and cut into thin slices. Cut the ham into 1 cm (approximately 1/2-inch) cubes.

Stir together the eggs, whipping cream, creme fraiche, mustard and half the cheese. Season with salt, pepper and nutmeg. Place alternating layers of potatoes and kale in a buttered baking dish, sprinkle with the ham and pour in the egg mixture. Sprinkle with remaining cheese and bake until golden brown for 35-40 minutes in preheated oven. Remove and serve immediately.
