600 grams waxy potatoes
salt

4 Endive
100 grams Prosciutto
1 Tbsp olive oil
7 eggs
80 milliliters Whipped cream
2 Tbsps freshly grated Cheese (such as Gouda)
freshly ground peppers
freshly grated Nutmeg
2 Tbsps freshly chopped parsley

Preparation steps

Scrub potatoes and cook for about 20 minutes in boiling salted water.

Butter baking dish.

Rinse and halve endives. Blanch in boiling salted water for about 1-2 minutes, rinse in cold water and drain. Cut ham into thin strips. Heat oil in a pan and cook ham until crispy. Drain on paper towels. Drain potatoes, peel, cool and cut into slices. Whisk eggs with cheese and cream, season with salt, pepper and nutmeg. Add parsley. Spread potatoes, ham and endives in a baking dish, pour egg mixture over and bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes. Remove from oven and serve immediately.
