- 4 large Sweet potato (cut into chips)
- 4 Tbsps olive oil
- Sea salt
- freshly ground Black pepper
- To serve
- Tomato salsa

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.
2.
Toss the sweet potato chips in the oil and season to taste with salt and black pepper.
3.
Put into a roasting tin or large baking dish in a single layer and bake for 30-40 minutes until tender.
4.
Sprinkle with sea salt and serve with tomato salsa.
