cup thick Double cream
3 cups small potatoes (even sized)
1 ½ Tbsps butter (chopped)
1 cup Cheddar cheese (grated)
½ tsp thyme

Preparation steps

1.
Heat the oven to 200C (180C in a fan oven) 400F, gas 6.
2.
Pour the milk and cream into a jug and mix together with a fork.
3.
Grease a 750ml/ 3 cup capacity ovenproof dish.
4.
Arrange a layer of sliced potatoes over the base of the dish, sprinkle with a little butter and cheese.
5.
Continue layering up the potatoes, with the butter and cheese.
6.
Pour over the milk and cream mixture and scatter over the thyme leaves.
7.
Cover with foil and bake for 1 hour until the potatoes are tender. Remove the foil and cook for 10 more minutes, until the topping is golden.
