- ¼ cup all-purpose flour
- ½ tsp Dry mustard
- ¼ tsp freshly ground Black pepper
- 2 ½ cups milk
- 2 cups shredded Cheddar cheese (divided)
- 1 small onion (peeled and thinly sliced)
- 6 peeled, baking potatoes (thinly sliced)

Preparation steps

Preheat oven to 350°F / 180ºC. Coat a 2-quart / 1.9-liters oven-proof casserole dish with nonstick cooking spray.

Melt butter in a medium saucepan set over medium heat. Blend in flour, mustard and pepper; cook and stirring constantly for 1 minute. Gradually add milk, stirring until well blended; cook 3 to 5 minutes until thickened, stirring frequently Add 1 1/2 cups cheese; cook 2 to 3 minutes, or until the cheese is melted, stirring frequently.

Layer potatoes. sliced onions and cheese sauce alternately in prepared casserole dish, ending with cheese sauce.

Bake for 70 to 75 minutes, or until potatoes are fork tender. Sprinkle with remaining cheese; bake for 5 minutes or until the cheese is melted and bubbly. Serve.
