Healthy, because

Even smarter

Cauliflower, unlike other types of cabbage, is easily digestible. The vitamin A from the eggs allows us to see well even at dusk. They also score points with minerals such as iron and zinc.

There are countless variations of this recipe. You can replace the cauliflower with Romanesco, mix additional corn grains into the vegetables, or prepare the curcuma sauce with curry. Nuts can also be used as topping over the cauliflower dish.

Preparation steps

1.

Melt butter in a small saucepan. Stir in flour and turmeric and cook briefly. Whisk in cream and milk and bring to a boil. Season with salt, pepper and vinegar and simmer over low heat, stirring occasionally, about 5 minutes.

2.

Cut ham into strips.

3.

Cook eggs in boiling water until yolks have wax-like consistency, about 7 minutes. Rinse with cold water and drain.

4.

Rinse snow peas and trim ends. Cover and simmer about 5 minutes. Keep warm.

5.

Rinse cauliflower and cook in plenty of salted boiling water until al dente, about 10 minutes. Drain and keep warm.

6.

To serve, peel and halve eggs. Mix vegetables with ham and divide among plates. Arrange egg halves around vegetables and drizzle with turmeric sauce. Garnish with parsley.
