2 Tbsps Pastry flour
1 tsp ground Turmeric
7 ozs Whipped cream
6 ozs milk
salt
freshly ground peppers
1 tsp Vinegar
7 ozs cooked ham
12 ozs Snow peas
18 ozs Cauliflower
8 eggs
parsley (for decoration)

Preparation steps

1.

Melt butter in a small saucepan. Stir in flour and turmeric and cook briefly. Whisk in cream and milk and bring to a boil. Season with salt, pepper and vinegar and simmer over low heat, stirring occasionally, about 5 minutes.

Cut ham into strips.

Cook eggs in boiling water until yolks have wax-like consistency, about 7 minutes. Rinse with cold water and drain.

Rinse snow peas and trim ends. Cover and simmer about 5 minutes. Keep warm.

Rinse cauliflower and cook in plenty of salted boiling water until al dente, about 10 minutes. Drain and keep warm.

6.

To serve, peel and halve eggs. Mix vegetables with ham and divide among plates. Arrange egg halves around vegetables and drizzle with turmeric sauce. Garnish with parsley.
