Potato and Green Bean Skillet with Lemon

Potatoes are a great source of energizing carbohydrates, green beans are a great source of vitamins, fiber, and minerals, and the lemon is a great source of vitamin
This is a great, summery side dish that would go very well with chicken breast or fish.

Preparation steps
Rinse the green beans, trim and cut into about 1 inch long pieces. Cook in boiling salted water for about 5 minutes, drain, rinse under cold water until cool then drain again.
Peel the potatoes, rinse and cut into about 3/4 inch cubes. Melt the butter in a nonstick pan and sauté the potatoes, turning occasionally, for about 12-15 minutes.
Meanwhile, peel the garlic and chop finely. Add to the potatoes and sauté until fragrant. Rinse, trim and slice the scallions. Rinse the lemon under hot water, wipe dry and finely grate the zest.
Add the green beans to the potatoes and sauté for about 5 minutes, until the potatoes and the green beans are tender. Season with salt, pepper and lemon zest. Serve sprinkled with scallions.
