- 800 grams waxy potatoes
- salt
- 250 grams green Beans
- 3 Tbsps White vinegar
- 1 Tbsp lemon juice
- ½ tsp medium-hot Mustard
- 5 Tbsps olive oil
- peppers (freshly ground)
- sugar
- 1 can Tuna (In its own juice, 175 grams)
- 2 Tbsps Caper

Preparation steps

Rinse potatoes and cook in salted boiling water, about 25 minutes. Then drain, rinse, let cool to room temperature and cut into slices.

Rinse beans and trim ends. Cook beans in salted boiling water until al dente, about 8 minutes. Rinse with cold water and drain well.

To make vinaigrette: Whisk vinegar with lemon juice, mustard and oil. Season with salt, pepper and sugar. Drain tuna and flake into pieces with a fork. In a bowl, gently mix tuna with potatoes, beans, capers and vinaigrette. Serve at room temperature, with a piece of ciabatta, if desired.
