- 6 slices Bacon
- 1 ⅛ cups whipping cream
- 2 eggs
- 1 medium onion (chopped)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 3 cups Yukon gold potato (peeled and thinly sliced)
- 1 cup sharp, white Cheddar cheese (shredded)

Preparation steps

Preheat oven to 375º F / 190º C. Cook bacon in a large skillet over medium-high heat, turning occasionally, until nicely browned. Drain on paper towels, chop and set aside.

Whisk cream, eggs, onions, salt and pepper in medium bowl to blend.

Place 1/3 of the potatoes in the bottom of a greased 8x8 inch baking dish, overlapping slightly. Sprinkle with 1/3 cup cheese and 1/3 of the chopped bacon. Pour about 1/3 of the cream mixture over everything. Repeat two more layers. Cover the dish with a lid or aluminum foil.

Bake 1 hour. Uncover and bake until top is golden brown and potatoes are tender, about 30 minutes longer. Let gratin cool 10 minutes before serving.
