freshly ground Black pepper (to taste)
1 Pork tenderloin (approx. 450 g | 1 lb)
2 tsps Canola oil
1 Tbsp Mayonnaise
1 Tbsp prepared yellow mustard
½ cup Dill Pickle (drained)
½ cup chopped onions
4 toasted Bagel (sliced)
1 small Cucumber (peeled and thinly sliced)
2 Tbsps Caper (drained)

Preparation steps

Preheat oven to 350º F.

In a small bowl, combine the cumin, coriander and pepper.

Rinse the pork tenderloin under cold running water and pat dry with absorbent paper towels. Rub the pork with the mustard spice mixture.

Heat the canola oil in a large skillet over medium-high heat. Once hot, add the pork loin and sear it on all sides. Transfer the pork loin to a roasting pan and roast until a meat thermometer inserted into the center of the loin reads 160º F, about 30 to 45 minutes. Transfer the pork loin to a cutting board, let rest for 10 minutes. Using a sharp knife, cut into thin slices. Meat may be stored in the refrigerator until ready to use.

Meanwhile, in a small bowl, combine mayonnaise and mustard. Place pickle slices in a food processor; pulse until pickles resemble relish. Spoon relish into bowl with mayonnaise and mustard. Rinse and dry food processor bowl. Add onion and pulse until it is the same size as the relish. Stir onion into mayonnaise and mustard mixture and stir with a spoon until well-blended.
6.
Spread sliced cucumbers on the bottom half of each bagel. Spread a layer of relish over the cucumbers. Top with sliced pork and sprinkle with capers. Spread cut side of bagel tops with remaining relish and arrange on top of sliced pork. Serve.
