1 egg yolk
1 tsp Mustard
l olive oil

2 Tbsps Caper

Preparation steps

For the sauce: Peel and chop onion. Mince pickle and anchovies. Rinse and mince parsley. Beat egg yolks and mustard until creamy, whisk in oil and season with lemon juice, salt and pepper. Stir in onion, pickle, anchovies and parsley. Mince capers, stir into sauce and chill.

For the pork: Rinse pork, pat dry and cut into bite-size pieces. Rinse scallions, trim ends and cut into large pieces. Rinse zucchini and eggplant, trim ends and slice. Peel garlic and cut in half crosswise. Alternate adding meat and vegetables to wooden skewers. Brush with olive oil and season with salt and pepper. Preheat a grill and cook, turning often, for 10 minutes.

Remove and serve with sauce.
