600 grams Mushrooms (such as button or cremini)
1 onion
2 Tbsps butter
salt

1 bay leaf
100 milliliters dry white wine
500 milliliters Beef broth
800 grams Pork tenderloin (trimmed)
2 Tbsps vegetable oil
thyme (for garnish)

Preparation steps

For the mushrooms: Wipe the mushrooms with a damp cloth and cut into small pieces if necessary. Peel the onion and chop. Sauté the onion in the butter until translucent, add the mushrooms and sauté for 2-3 minutes. Season with salt and pepper and add the bay leaf. Deglaze with the wine and let boil down until almost completely evaporated. Add the broth and simmer for 4-5 minutes.

For the pork: Rinse the meat, pat dry, season with salt and pepper and slice. Heat the oil in a large frying pan and sear the meat on all sides, around 5 minutes. Reduce the heat, cover and cook for 2-3 minutes, or until cooked to your liking. Arrange the meat over the mushrooms on serving plates and season with salt and pepper. Serve garnished with thyme.
