- salt
- freshly ground pepper
- 1 Red onion
- 400 grams Tomatoes
- 400 grams Cucumber
- ½ bunch flat-leaf parsley
- 2 Tbsps Lime juice
- 2 Tbsps vegetable oil
- 4 Tbsps Ketchup
- 2 Tbsps honey
- cayenne pepper
- 1 garlic clove

Preparation steps

Rinse ribs, pat dry, season with salt and pepper and arrange on a lined with aluminum foil baking sheet. Roast in preheated oven at 200 °C (approximately 400 ° F) for about 40 minutes. Peel onion and chop finely. Blanch tomatoes in hot water for a few seconds, rinse in cold water and peel. Quarter and remove seeds, dice finely. Peel cucumber and halve, remove seeds and dice. Rinse and shake dry parsley, pluck off leaves and chop. Combine onion, tomatoes, cucumber and parsley. Toss with lime juice and season with salt and pepper.

Whisk ketchup with honey and cayenne pepper. Peel and squeeze garlic, add to the mixture. Brush ribs with the mixture and roast for 15 more minutes. Arrange on a platter and serve with salsa.
