1 ½ kilograms Pork ribs (Spareribs)
salt
freshly ground pepper
2 Tbsps vegetable oil
2 tsps freshly grated ginger
5 Tbsps soy sauce
7 Tbsps Ketchup
3 Tbsps honey
2 Tbsps Vinegar
1 Red onion
250 grams Pineapple (canned)
1 can Corn (250 grams drained)
Juice of 1 lemons
Sambal oelek

Preparation steps

1.

Preheat the oven to 225°C (approximately 435°F). Rinse the ribs and pat dry, season with salt and pepper and place on a greased baking sheet with 1 tablespoon oil. Roast 30 minutes.

In a bowl, stir together the soy sauce, 5 tablespoons ketchup, the honey, vinegar, remaining oil and ginger. Brush the mixture on the ribs and roast 20 minutes.

Peel the onion and chop finely. Drain and finely chop the pineapple and combine with the onion, corn and lemon juice. Season with salt and sambal oelek. Brush the ribs with the remaining ketchup and serve with the pineapple-corn salsa.
