600 grams Pork tenderloin (trimmed)
10 slices Pancetta
400 grams green Beans
1 Fennel
1 tsp fennel seeds
½ tsp Coriander
1 chili pepper (dried)
1 tsp peppercorns
Sea salt
50 grams black Olives (pitted)
olive oil (for cooking)
4 Tbsps Whipped cream

Preparation steps

1.

Combine fennel seeds, coriander seeds, chile pepper, peppercorns and a little sea salt in the mortar and grind. 

2.

Rinse and pat dry pork, cut a pocket on the side and stuff with half of spice mixture. Wrap pork in pancetta. Heat oil in pan and brown meat on all sides. Place onto a baking sheet  and roast in preheated oven at 140°C (approximately 275°F) for about 30 minutes.

Rinse and tirm beans. Cook in boiling salted water for about 8 minutes.

Rinse and halve fennel, remove stalk and cut into slices. Saute in meat drippings combined with a little oil for about 10 minutes or until golden brown. Season with remaining spice mixture and add olives. Arrange fennel on warmed plates and top with beans and sliced pork. Drizzle with sour cream and serve.
