Pork Chops with Mashed Potatoes
Peel potatoes and cook in salted water for about 25 minutes or until tender. Drain and press through a ricer or mash with a potato masher. Season with salt, pepper and nutmeg, add cream and 2 tablespoons of butter and keep warm.
Rinse and halve bell peppers, remove seeds and ribs and cut into strips.
Peel onion, halve lengthwise and cut into wedges. Heat 2 tablespoons of butter in a pan and saute peppers with onion for about 8 minutes or until tender, season with salt and pepper.
Season chops with salt and pepper. Heat butter in a pan and cook chops for about 4 minutes per side. Remove from the pan and keep warm.
Deglaze pan juices with broth, add green peppers and simmer briefly, return chops to the pan and simmer for 2-3 minutes.
Arrange chops with peppers and mashed potatoes on warmed plates. Serve.
