- 2 Tbsps olive oil
- 2 cups button Mushrooms (sliced)
- 2 cups Smoked Sausage (sliced)
- 4 cups cooked Gnocchi
- ⅔ cup vegetable stock
- ¾ cup Parmesan (grated)
- flat-leaf parsley (finely chopped)
- salt
- freshly ground peppers

Stir in some cubed goats' cheese instead of Parmesan for a creamy finish.
Preparation steps
1.
Heat the olive oil in a large saute pan set over a moderate heat until hot.
2.
Add the mushrooms, sausage, and a pinch of salt and pepper. Saute for 5 - 6 minutes until the mushrooms start to colour.
3.
Add the gnocchi and stock. Cook for a further 5 minutes, until the gnocchi is piping hot.
4.
Stir in the Parmesan and parsley. Season to taste with salt and pepper before serving.
