- 1 ½ cups ham hock (diced)
- 3 ⅓ cups Pork loin (diced)
- 1 Golden Delicious Apple (cored and sliced)
- 2 Tbsps Wholegrain Mustard
- 2 cups Cider
- 7 ozs ready-made Puff pastry
- all-purpose flour (for dusting)
- 1 large egg (beaten)
- salt
- freshly ground peppers

Substitute the cider for half apple juice and half ham stock for a non-alcoholic version.
Preparation steps
1.
Preheat the oven to 180°C (160° fan)|350F|gas 4.
2.
Melt the butter in a large cast-iron frying pan set over a medium heat until hot. Add the bacon and fry for 3 minutes until golden.

Add the pork and apple, stirring well. Cook for a further 3 minutes and then stir in the mustard and cider. Simmer for 5 minutes and adjust the seasoning to taste, setting the pan to one side.
4.
Roll out the pastry on a lightly floured surface into a round approximately 5 cm | 2" wider than the diameter of the frying pan. The pastry should be approximately 1/2 cm | 1/4" thick.
5.
Cut the pastry to size and draper over the filling in the pan, tucking in the edges. Brush the top with the beaten egg and make three small slits in the top.
6.
Bake for 30 - 35 minutes until the pastry is golden and puffed before serving.
