These muffins are perefct for breakfast, a snack, or dessert! They have less sugar than regular muffins, so they will not make you crash as easily after eating them.
For an even healthier, low calorie version, opt to not use the crumble topping and just make the plum muffins without it.

- 1 ¼ cups all-purpose flour
- 1 Baking powder
- 1 pinch salt
- 1 egg
- ¼ cup Superfine sugar (scant)
- ½ cup 2% milk
- ¼ cup sunflower oil
- ½ tsp ground cinnamon
- 6 black or red Plum
- For the crumble topping
- ½ cup all-purpose flour
- ⅓ cup Almond flour
- ⅓ cup brown sugar
- 1 tsp ground cinnamon
- ⅓ cup low-fat spread (butter substitute, suitable for baking, melted, or Coconut oil)

Preparation steps
1.
Heat the oven to 400°F. Place paper liners in 6 large muffin tins.
2.
Sift the flour, baking powder, salt and cinnamon into a mixing bowl.
3.
Whisk together the egg, sugar, milk and oil.
4.
Quickly stir the wet ingredients into the flour mixture until just combined.
5.
Cut plums in quarters, remove the pit. Spoon into the paper liners and place a plum quarter in the centre of each.
6.
For the crumble topping: mix all the topping ingredients with your hands until the mixture clumps together. Sprinkle on top of the cake mixture.
7.
Bake for about 30 minutes, until well risen and browned. Place on a wire rack to cool completely.
