- 500 grams ripe Plum
- 170 grams butter
- 110 grams fine sugar
- 1 Vanilla bean
- 120 grams fresh white bread
- 100 grams peeled ground almonds
- cinnamon
- 9 Lasagne noodle
- 250 grams Crème fraiche
- mint (for garnish)
Preparation steps
Halve and pit plums and cut into thin slices. Melt 40 grams (approximately 3 tablespoons) of butter and 50 grams (approximately 1/4 cup) of sugar in a pan. Halve vanilla pod and remove seeds. Cut vanilla bean into 4 cm (approximately 1 1/2-inch) long pieces. Add vanilla pieces and plums to pan and cook until plums are slightly softened.
Remove crust from white bread and crumble. Melt remaining butter, add bread, almonds, remaining sugar and cinnamon and cook everything until golden.
Break lasagne sheets in half and boil in lightly salted water until al dente.
Spread some plum sauce on plate and top with a lasagna sheet. Add more plum sauce, then spread with roasted almond mixture and a spoonful of crème fraîche. Repeat layers until all ingredients are used up. Serve garnished with mint leaves.
