100 grams blanched almonds (finely ground)
½ l milk
1 pinch salt
70 grams sugar (more or less, to taste)
100 grams Rice starch
3 Tbsps Pistachio (chopped)
3 Tbsps blanched almonds (chopped)

Preparation steps

In a pot, bring milk, finely ground almonds, sugar and a pinch of salt to a boil, stirring constantly. Remove from heat and let cool about 1 hour. Strain milk through a fine sieve, pressing on solids to extract as much liquid as possible.

Return the milk to the saucepan and heat over low heat. Stir in 150 ml (approximately 1/3 cup) cold water and bring to a boil, stirring constantly. Remove from heat and pour into cold, rinsed jars. Let cool at least 2 hours. Serve garnished with chopped pistachios and almonds.
