5 sundried Tomatoes (in oil)
2 Anchovy fillet (in oil)
2 scallions
1 bunch Basil
1 Tbsp chopped Caper
1 garlic clove
125 grams Mozzarella
salt

3 Beefsteak tomato
6 slices Toast
2 Tbsps olive oil

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F).

Drain the sundried tomatoes and anchovies and cut into fine strips. Rinse the scallions, trim and cut the green parts into thin rings. Pluck the leaves from the basil, rinse, shake dry, set some aside for garnish and cut the rest into strips.

Mix the sundried tomatoes with the chopped scallions, basil, capers, anchovy fillets and minced garlic. Drain the mozzarella, dice and mix in. Season with salt and pepper.

Rinse the tomatoes, remove the stalks and cut into thin slices.

5.

Arrange the tomato slices over the bread, sprinkle with the mozzarella mixture, drizzle with oil and place on a baking sheet lined with parchment paper.

6.

Bake for about 12 minutes. Cut in half diagonally and serve garnished with basil leaves.
