4 slices Whole Wheat Toast
1 small onion
1 Tbsp olive oil
6 ozs chunky tomatoes (can)
1 Tbsp Tomato paste
salt
peppers
2 Tbsps pitted black olives
6 ozs Cherry tomatoes
4 ozs Mozzarella
1 handful Basil

1 Baking sheet, 1 Toaster, 1 Non-stick pan

Preparation steps

Lightly toast slices in the toaster for 1 minute. Line a baking tray with baking paper and place toast on it.

Peel and finely chop the onion. Heat the oil in a pan and sauté the onions over medium heat until translucent, then add the tomatoes. Stir in tomato paste, a little salt and pepper and simmer for about 5 minutes at low heat.

In the meantime cut olives into rings. Wash the tomatoes, grate them dry and cut them into slices. Drain mozzarella and dice.

Spread the slices of toast with the tomato sauce, cover with tomatoes and olives and then place mozzarella on top. Bake the pizza toast in a preheated oven at 390°F for about 10-15 minutes.

5.

Meanwhile, wash basil, shake dry and pluck leaves from the stalks. Serve the finished toast garnished with the basil.
