- For the Patties:
- 3 cups canned chickpeas (drained and rinsed)
- 2 scallions (finely chopped)
- 1 clove garlic cloves (peeled, finely chopped)
- 1 egg yolk
- 2 Tbsps flat-leaf parsley (chopped)
- 2 Tbsps cilantro (chopped)
- 1 tsp Cumin (ground)
- ¼ tsp cayenne pepper
- breadcrumbs (as required)
- For the Cucumber Relish:
- 1 Cucumber (halved, seeds removed, finely chopped)
- ½ tsp Curry powder
- 3 Tbsps lemon juice
- ½ tsp brown sugar
- 2 Tbsps dried, fried onions
- For the Yogurt Topping:
- ⅔ cup Yogurt
- 1 tsp lemon zest (finely grated)
- To Serve:
- vegetable oil (for frying)
- 4 small Pita bread
- 1 Red onion (peeled, finely sliced)
- 1 handful baby Spinach
Preparation steps

For the chickpea burgers: Purée the chickpeas briefly; they should not be completely smooth. Mix in the spring onions, garlic, egg yolk and herbs. Season with cumin, salt and cayenne.

Knead the mixture to a dough, adding breadcrumbs as required. Moisten your hands and shape the mixture into four patties.

For the cucumber relish: Mix the cucumber with the curry powder, 2 tbsp lemon juice, sugar, salt and ground black pepper. Sprinkle with dried fried onions and set to one side.

For the yoghurt dip: Mix the yoghurt with the lemon zest and the remaining lemon juice in a small bowl. Cover and chill until needed.

When ready to serve, heat a couple of tablespoons of vegetable oil in a large frying pan set over a moderate heat until hot. Shallow-fry the burgers for 3 - 4 minutes on each side until they are golden brown.
6.
Heat the pitta breads briefly in a hot pan, if desired. Top with the spinach, the chickpea patties, red onion, and cucumber relish. Top with the yoghurt before serving.
