Betanin gives beets and our drink their distinctive red color, but also exhibits antioxidant properties and protects our cells from free radical damage. Magnesium is an important mineral for building muscle, nerve, and bone cells contained in pumpkin seeds. It has a positive effect on muscle functions. The protein in silken tofu provides for their build-up. Therefore, the pink berry coconut drink with silken tofu is a real must-have after sports.

If you can not find silken tofu in your supermarket, they are also welcome to use a yogurt alternative made from soy for preparation. Otherwise, the remaining silken tofu can also be used, for example, to fill cannelloni. You can find more recipes here on EAT SMARTER. And for all the coconut fans among us: With a coconut drink instead of soy drink comes real vacation feeling!

The pink berry coconut drink with silken tofu can also be used to replace a small meal, as it is rich and satisfies for a long time.
