300 grams fresh Pineapple (cleaned and weighed)
250 milliliters Buttermilk
1 tsp freshly chopped ginger
1 Tbsp sugar
1 tsp Agar
200 grams fresh Blackberry
4 Portion forms
Lemon balm (for garnish)

Preparation steps

1.

Cut the pineapple into small cubes. Rinse the lemon balm and shake dry. Put 4 leaves aside and coarsely chop the rest. Mix with the pineapple cubes. Rinse the molds in cold water fill with the pineapple.

Heat butter, milk, ginger, sugar and agar for 5 minutes. Allow to cool and pour over the pineapple. Allow to gel in the fridge for a few hours. Rinse and blackberries. Set some aside for garnish, crush the rest and pour through a sieve.

3.

To serve, place the pineapple cream upside down on a plate, spread the blackberry sauce around the plate and garnish with blackberries and lemon balm.
